Recipe Ingredients for Lamb and Vegetable Curry with Steamed Brown Rice

1 c brown rice
2 t sesame oil
1 medium onion, sliced
1 medium red sweet pepper, cun into strips
2 cloves garlic, pressed
1 T gingerroot
1/2 t red curry paste
1 lb boneless lamb loin, cut into 1-in strips
1 c organic vegetable broth
1 c coconut milk
1 T soy sauce
2 c cauliflower florets
4 c spinach leaves
1 T lime juice, fresh squeezed

Recipe Directions for Lamb and Vegetable Curry with Steamed Brown Rice

  1. Place brown rice and 2 c. filtered water in a small saucepan. Cover and bring to a boil. Reduce heat to low and steam for about 45 minutes, until water has been absorbed and the rice is tender.

  2. When rice has been cooking for 25 minutes, heat oil in a large skillet over medium-high heat. Add onion and pepper; cook until vegetables begin to soften. Add garlic, ginger, and curry paste and mix well. Add the meat, coconut milk and soy sauce and bring to a simmer. Add the cauliflower and reduce heat to medium-low, stirring occasionally, until meat is cooked through and cauliflower is tender, about 10 minutes. Toss in spinach and lime juice, and cook just until the spinach is wilted. Serve immediately over the steamed rice.
