SB moroccan lamb stew, sweet and fruity

Recipe Ingredients for Lamb Tagine

2 g saffron threads
1 onion
2 tbsp olive oil
580 g lamb
1/2 tsp ground cinnamon
1 tsp ground ginger
3 carrots
500 ml stock, lamb
250 g butternut squash
125 g dried apricots
125 g prunes
1 tbsp honey
1 tbsp balsamic vinegar
1 tbsp corn flour

Recipe Directions for Lamb Tagine

  1. pre heat oven to 160deg, put saffron in a bowl with 3tbsp hot water. cook onion in 1tbsp of oil in a pan. remove and put in a casserole dish or tagine. leave any fat in the pan.

  2. add the remaining oil to the pan and brown the meat in batches and add the onion.

  3. sprinkle the spices on the meat. add the saffron, carrots and stock. stir, cover and cook in the oven for 1 hour.

  4. add the squash and fruit. cover and cook for 50 mins. mix the honey, vinegar and flour until smooth and stir in. cover and cook for 10 mins.

  5. serve with couscous and toasted almonds.
