Recipe Ingredients for Lamb Tagine

3 tbsp olive oil
830 grams lamb
1 1/2 onions
2 garlic cloves
1 teaspoon ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon pepper
1/4 teaspoon ground cinnamon
1/4 teaspoon ground coriander
1/4 teaspoon cayenne
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
1 teaspoon fresh ginger
2 plum tomatoes, deseeded
250 ml white wine
250 ml chicken stock
100 g dried apricots

Recipe Directions for Lamb Tagine

  1. Heat half of olive oil, saute the lamb in batches over high heat.

  2. Remove lamb, lower heat, saute onions to soften.

  3. Add garlic, spices, ginger. Cook for a minute until the spice mixture blooms. Return meat to pan.

  4. Add tomatoes (peeled, deseeded, diced), wine and stock. Bring to boil, lower to simmer. Cover for up to 2 hours at a low wimmer.

  5. Add dried apricots. Cook 20 minutes more. Serve with couscous and green vegetable.
