From an Annabel Karmel book I have. Good tagine recipe.

Recipe Ingredients for Lamb Tagine

690 grams Lamb, Cubed For Stew Or Kabob (Leg And Shoulder)
40 grams Plain All Purpose Flour
1 dash Salt, Table
4 1tsp Olive Oil
1 tbsp chopped Onions
1 tsp Cinnamon, Ground
2 3/10 g Cumin Powder
1 cloves, raw Garlic
2 tsp Curry Powder
1 1/2 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
1 1/2 cup Tomatoes, Red, Ripe
1/4 cup Tomato Puree
1 Apple Apples
5 grams Honey, Strained Or Extracted
1 1/2 cup Soup, stock, chicken, home-prepared
140 grams Apricots, Dried, Sulfured, Uncooked

Recipe Directions for Lamb Tagine

  1. Season flour and toss diced lamb through.

  2. Brown lamb in oil- put aside to cool.

  3. Fry onion in oil until clear.

  4. Add cinnamon, cumin, garlic and curry powder.

  5. Add stock bit by bit, then add chickpeas, tomatoes, tomato puree, grated apple and honey.

  6. Add in lamb, put in casserole dish and cook in oven on low heat for 1 hour.

  7. Add apricots (chopped in half).

  8. Cook for another hour on low heat.

  9. Serve with couscous.
