Recipe Ingredients for Lamb Tagine with Apricots

300 grams Lamb
2 cloves, raw Garlic
1.33 medium raw Onion Red
128 grams Carrots
1.75 medium raw Sweet Potato
1/4 cup Tomato Puree
3 tbsp Vegetable Oil, Canola
10 apricots Premium Mediterranean Dried Apricots
1 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
1 tsp Cinnamon, Ground
1 tsp Cumin
1 tsp Coriander Leaf, Dried
0.5 tsp Chili Powder

Recipe Directions for Lamb Tagine with Apricots

  1. Seal diced lamb in 1 tbsp of oil.

  2. Add rest of the oil to the pan having removed the lamb. Saute the onion with garlic and salt until soft. Add spices, tomato paste, juice of 1 lemon and 4 cups of water. Add sweet potatoes and carrots and chickpeas. Then add the lamb and cook on a low heat for approximately 1 hour until the lamb is tender and the sauce is very reduced.
