Slow cooker stuffed peppers with a Mediterranean twist - healthy & delicious.

Recipe Ingredients for Lamb Stuffed Peppers

26 oz marinara sauce
1 T red wine vinegar
1/2 tsp cumin
1/4 tsp cinnamon
1/4 tsp allspice
1/8 tsp nutmeg
2 red peppers
2 green peppers
10 oz lamb, ground
1 small zucchini, diced
1/2 c barley
1/2 cup onion, finely chopped

Recipe Directions for Lamb Stuffed Peppers

  1. Combine tomato sauce, vinegar, and spices in large bowl. Spoon 1 1/2 cups mixture into 4 qt or larger crockpot.

  2. Slice off top 1/2 inch of peppers; seed and reserve tops.

  3. Add lamb, zucchini, barley and onion to remaining sauce, mix well.

  4. Stuff mixture into peppers, packing if necessary. Replace tops on peppers. Stand upright in cooker.

  5. Cover & cook on low 5-6 hours or until tender. Internal temperature of filling should be 165 degrees.

  6. Optional: add 1/4 cup raisins or currants.
