very lean lamb meat stewed for 5 hours.

Recipe Ingredients for lamb stew

1 lb lamb
269 gram carrot
130 gram mushroom
260 gram mushroom
1/4 cup tomato puree
80 gram garlic
1 cup wine

Recipe Directions for lamb stew

  1. brown lamb in skillet with 1/2 tsp wesson oil ( do two sides ).

  2. add carrot,celery, chantrelle and crimini mushrooms and 3 peppercorns and a bay leaf.

  3. Add 2 cups of water and reduce heat (from medium to low).

  4. Add 2 to 4 ounces of tomato puree (all to taste).

  5. slow cook covered for some hours till the lamb is tender. Season with thyme and a little salt. Adjust seasoning as needed (you have to make it taste good for your palate)

  6. Add wine in the last 20 minutes.

  7. pick out the meat and mushrooms and puree the rest; Then re-add the meat and shrooms.

  8. Serve over roasted neeps, tatties and parsnips.
