Lamb Stew with Peppers and Mushrooms

Recipe Ingredients for Lamb Stew with Peppers and Mushrooms

1 tsp olive oil
8 ounces lamb, cubed
16 ounces onion, sliced 1/2 inch thick
18 ounces bell peppers, sliced 1/4 inch by 1 inch
4 cloves garlic, smashed
1/4 tsp cayenne
2 tsp paprika
8 ounces mushrooms, thinly sliced
28 4/5 ounces diced tomatoes
1 tsp Worcestershire sauce
1 tsp lemon juice
1/2 tsp rosemary
1 salt and pepper
2 tsp cornstarch
6 ounces fat free yogurt

Recipe Directions for Lamb Stew with Peppers and Mushrooms

  1. Heat olive oil on medium low in a dutch oven. Add lamb and brown. Remove and set aside.

  2. Add the onions and peppers and cook until soft. Add the cayenne, paprika, and garlic. Remove the peppers, onions, and garlic. Add the mushrooms and return lamb to the pan. Cook until mushrooms are soft.

  3. Add tomatoes, along with the Worcestershire sauce, lemon juice, rosemary and black pepper. Mix well, reduce the heat to medium-low, cover the pan and simmer for 15-20 minutes.

  4. Stir the cornstarch into the yogurt and add to stew. Cook over low heat, stirring occasionally, until sauce thickens a little.
