Recipe Ingredients for Lamb Steak Casserole

12 oz lamb steak, trimmed of fat
1/2 cup long grain rice, uncooked
5 oz mandarin oranges, drained
1 1/2 cups water
2 tsp beef bouillon powder

Recipe Directions for Lamb Steak Casserole

  1. reserve juice from drained mandarins and add enough water to give you 1.5 cups of liquid

  2. spray hot frying pan with no-stick cooking spray, add lamb and brown on both sides, place in 2 quart casserole dish

  3. pour rice evenly over the top of lamb followed by orange segments

  4. stir juice-water mixture with bouillon to dissolve, pour over mixture....cover and bake in 325 oven for 1 1/4 to 1 3/4 hours until rice is cooked and meat is tender

  5. serve with veggie of choice eg. peas or mixed veggies
