A winter soup with tender shank meat and vegetables

Recipe Ingredients for Lamb Shank Soup

120 g lamb shank
1 carrot
2 stalk,+medium+7-1/2"+-+8"+long celery
1 onion
2 tomatoes
3 tbsp tomato paste
1 pinch salt
1 pinch pepper
1750 ml water
75 g Angel Hair

Recipe Directions for Lamb Shank Soup

  1. Chop all vegies (quartering tomatoes).

  2. Put all ingredients other than pasta in large soup pot and simmer for 2.5-3 hours. Remove tomato skins.

  3. With two forks, shred the shank meat off the bone.

  4. Add pasta and cook for another 20 minutes.

  5. Serve with crusty bread.
