Low GI kebabs marinaded in spicy yoghurt

Recipe Ingredients for Lamb & Red Onion Kebabs GI Jane

5 oz (lean) lamb, cut into 1" cubes
1 garlic clove, crushed
1 pinch ground cumin
1 pinch paprika
1 pinch cayenne pepper
2 oz yoghurt
1/2 red onion
1/2 red pepper
1 oz brown rice (uncooked weight)

Recipe Directions for Lamb & Red Onion Kebabs GI Jane

  1. Combine the yoghurt, garlic and spices and season well

  2. Add the lamb and coat in the marinade. Cover and refrigerate for 2 hours

  3. Alternate lamb cubes, red pepper pieces and onion wedges on skewers and grill under a medium grill for 10 - 12 minutes

  4. Serve with the brown rice and a tomato salad
