Delicious lamb and lentil curry with spinach and tomatoes for a bit of oomph.

Recipe Ingredients for Lamb and Lentil Curry

1 pound lamb, ground
1 cup lentils, raw
2 cups water
1 tablespoon curry powder
1 tsp thyme
1 tsp turmeric
1 tsp paprika
2 tsp celery salt
1 tsp mustard
2 cups spinach, frozen, chopped
1 onion, chopped
1 tomato, diced
2 cloves garlic, sliced

Recipe Directions for Lamb and Lentil Curry

  1. Brown lamb in bottom of stock pot, drain excess fat.

  2. Add onion and cook until onion is just clear. Add garlic and cook until fragrant.

  3. Add Lentils, water, and seasonings to pot.

  4. Bring to boil, cover and reduce to a simmer.

  5. Cook for 20 - 25 minutes until lentils are bite tender.

  6. Add spinach and tomato. Cook for 5-7 minutes more.

  7. Remove from heat, let sit for 10 minutes to thicken.

  8. Serve with quinoa or brown rice.
