Recipe Ingredients for Lamb Lasagna

2 lbs ground lamb, lean
24 oz spaghetti sauce
5 oz tomato sauce, no salt added
1 3/4 cups frozen chopped spinach, drained
12 oz artichoke hearts, drained
3 cups ricotta cheese (goat cheese)
1 1/2 tsp salt
8 oz mozzarella
2 eggs

Recipe Directions for Lamb Lasagna

  1. browned lamb, seasoned, added artichokes and spinach; simmered until most liquid gone.

  2. mixed ricotta (goat cheese from M&D), soy protein powder and 2 eggs. Layered as for Lasagna, topped with mozzarella

  3. baked 325 for about 75 min; could do 350 for shorter but I was working out while it baked.
