Recipe Ingredients for Lamb Kofte

2 slices whole wheat bread
1/4 cup Italian parsley
1/2 cup mint leaves
1 egg
1 small onion
2 cloves garlic
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
3/4 teaspoon salt
1/2 teaspoon ground black pepper
1 pound ground lamb

Recipe Directions for Lamb Kofte

  1. Remove crust from bread and pulse in a food processor until fine.

  2. Finely chop the parsley and mint

  3. Mince the onion and garlic

  4. In a large bowl, mix the breadcrumbs, parsley, mint, egg, onion, garlic, cumin, coriander, salt, and pepper.

  5. Add the lamb to the mixture and mix again.

  6. Shape the lamb mixture into 18 pieces, each the size and shape of a small egg. Refrigerate until ready to grill. You may also freeze on a cookie sheet. Store in a ziplock bag and thaw/grill as needed.

  7. Place 3 koftes on a skewer and grill over a medium-hot flame, 5 to 7 minutes, turning once or twice.

  8. Serve 1 skewer per person, with warm pita bread, and tzatziki.
