Recipe Ingredients for Lamb Kofta in Ruby Red Grapefruit Sauce

1 lb ground lamb
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup beef stock
1/4 cup olive oil
8 garlic cloves
1 teaspoon cayenne
2/3 cup cashews
1 cup diced tomatoes
1 cup ruby red grapefruit juice
1 cup low fat milk
1 dash of nutmeg

Recipe Directions for Lamb Kofta in Ruby Red Grapefruit Sauce

  1. Mix together lamb, cinnamon, & salt. Form into meatballs using a tablespoon. Place in a stock pot & pour in stock. Simmer 15 mins, turning once, 'til done.

  2. Place the garlic cloves into a food processor & grind to a smooth paste, adding water as necessary. Do the same with the cashews.

  3. Heat the oil & fry the garlic 'til golden brown, about 5 mins. Add the cayenne & fry one minute. Add the cashews & fry 8-10 mins, 'til oil starts to separate. Add the tomatoes & cook 2-3 mins. Add the grapefruit juice & reduce slightly. Add the milk & nutmeg. Reduce to desired consistency.

  4. Add the kofta to the sauce, thinning with some kofta cooking liquid as necessary.
