Tasty, easy curry thickened with eggplant

Recipe Ingredients for Lamb curry

2 tbl canola oil
3 lb lamb shoulder boneless, defatted & cut 1"
2 c onions, chopped
2 tbl ginger, fresh, grated
2 tsp cumin
1 tbl coriander, ground
1 1/2 tsp turmeric
1/2 tsp red pepper flakes
14 oz tomatoes, canned, diced
2 tsp salt
1 eggplant, peeled and diced
3 tbl cilantro, chopped

Recipe Directions for Lamb curry

  1. Pat lamb cubes dry on paper towel and season with salt. Brown in 1/2 of the oil over medium-high heat on all sides. Set aside.

  2. In same pan, add the remaining oil along with the onions, cooking until they turn light brown, about 10 minutes, stirring constantly so that they do not burn.

  3. Add the spices and continue cooking until they give out their fragrance.

  4. Return lamb to the pan along with tomatoes and 3 cups of water. Reduce heat and simmer gently for 30 minutes.

  5. Add the cubed eggplant and cook an additional 30 minutes, replacing some water if necessary. The eggplant should "melt" and thicken the curry.

  6. Serve over brown rice. Top with chopped cilantro
