sweet fresh curry with brown rice

Recipe Ingredients for Lamb Curry

1/2 lb Lamb, Shoulder
1 cup brown rice (cooked, yield about 3 cups)
4 medium carrots
1 large pear
1 small peach
1 red bell pepper
1 small onion
3 stalks celery
2 tbsp red curry paste

Recipe Directions for Lamb Curry

  1. Boil rice according to package directions, about 40 minutes.

  2. Chop vegetables/fruits and layer in backing dish. Place cut up lamb meat on top. mix curry past with about 1/4 cup water and pour over meat and vegetables. Bake in 325 F oven about an hour.

  3. Layer roast veggies and lamb mixture with rice in serving dish, pour pan juices over all.
