1 large onion
1/2 cup couscous
8 Yukon Gold Potatoes
36 baby carrots
5 cups water
1 (800g) diced tomatoes
1/2 cup peas
2 cups zucchini
3 clove garlic
2 tbs olive oil
1 tbs sea salt

  1. Sear lamb cubes in olive oil

  2. add chopped onion and garlic

  3. add salt, spices

  4. add chopped veggies

  5. add can of diced tomatoes

  6. add uncooked couscous

  7. water

  8. cook in le creuset low for 2 hrs
