A Greek dish. The original recipe calls for lamb instead of beef. Since my husband and I don't eat lamb, beef is substituted. Recipe courtesy of The Frugal Gourmet.

Recipe Ingredients for Lamb (Beef) & Artichoke Stew

4 tbsp Salted Butter
32 oz Lamb or Beef
3 onion Yellow Onion
2 pieces Garlic Cloves
1/2 cup Parsley
6 oz Tomato Paste
8 oz Wine
28 oz Artichoke
1/2 tsp Dill Weed, Dried
0.27 oz Juice

Recipe Directions for Lamb (Beef) & Artichoke Stew

  1. In very large frying pan, melt the butter. Add beef and saute until lightly browned. Remove the meat.

  2. Saute yellow onions along with garlic and parsley.

  3. Place meat, onions, garlic and parsley in heavy kettle, and add salt, pepper, tomato paste, and white wine. Simmer, covered for 1-1/2 hours.

  4. Add artichokes, dill weed, and lemon juice. Simmer until all is tender, about 1-1/2 hours.

  5. Serve over pilaf. Along with stew over pilaf, serve a fruit tray and large salad.
