Recipe Ingredients for Lala's egg rolls

6 thigh, bone and skin removed Chicken, Thigh, Meat Only
133 1/2 grams Napa Cabbage
12 clove Garlic
1 small (5-1/2" long) Carrots
0.25 cup Wheat Flour, White, All-purpose, Enriched, Bleached
0.25 cup Vegetable Oil, Canola
24 wrappers Egg Roll

Recipe Directions for Lala's egg rolls

  1. Cook chicken fully.

  2. Finely chop, shred, or dice: chicken, cabbage, garlic, and carrot. Lightly toss together until fully mixed.

  3. Beat egg with a little water or soy sauce.

  4. Place flour in a plate and lightly dust counter top.

  5. Lay out 3-4 wrappers, depending on space, at a bias.

  6. Put 1/4 cup mix on each wrapper. Grab corner closest to you, pull over mixture, take corners perpendicular to you and fold over the first on and mixture, with a brush put a dab of egg mixture onto remaining corner, roll tucked portion into egg washed corner (should look like a burrito). Brush egg wash over entire egg roll and roll in flour. Do this until mixture is gone and all rolls are made.

  7. If freezing: wrap loosely in parchment and place in storage bag or container.

  8. If cooking: heat oil in sauce pan. Place several egg rolls in oil rotate to ensure wrapper is cooked on all sides. As chicken is fully cooked there is no need to cook egg rolls longer than a few minutes.
