Makes 8 servings



Thai wide rice noodles with vegetables. The restaurant version was good. I'm trying for calorie count here. It's really 4 servings, but I took half in a take home box.

Recipe Ingredients for Lad Nha

8 oz wide Thai rice noodles
8 oz roast pork
2 bunch broccoli
9 g garlic
1/2 c chicken broth
1 T corn starch
4 T canola oil
3 T soy sauce
1 T black beans, rinsed
1 T fish sauce

Recipe Directions for Lad Nha

  1. Pre-soak rice noodle in warm water for at least an hour. Drain well before use.

  2. Cut broccoli into bite-size pieces and peel and cut stems.

  3. Thinly cut pork, beef or chicken into easy to cook pieces. Add a splash of fish sauce and white pepper, and lightly coat with cornstarch.

  4. In a frying pan brown the noodle in oil.

  5. As you stir the noodle, pour in about 2-4 tablespoonful of thick sweet black soy sauce.

  6. Stir thoroughly to coat noodles, remove and set aside on serving plates.

  7. Wipe the pan clean and pour in about 2 tablespoonful of oil and lightly brown garlic and black beans.

  8. Stir in meat for about a minute, then add in the broccoli.

  9. After about 3-4 more minutes, pour in about 1/2 - 1 cup chicken broth and flavor with fish sauce.

  10. Bring sauce to a boil and slowly add cornstarch solution, stir until thicken.

  11. Pour sauce over noodles, add a sprinkle of sugar if so desired.
