Rich, heavy Polish raisin bread. One slice is all you need. Perfect for Easter. **NOTE: "lemon zest" is one lemon rind, grated.

Recipe Ingredients for Kuzumak

2 cups 2% milk
1 cup butter
1 cup sugar
1/2 oz active dry yeast
5 large eggs
2 tbsp lemon zest
1 tsp vanilla extract
8 cups flour
15 oz raisins

Recipe Directions for Kuzumak

  1. Heat milk in saucepan.

  2. Add butter and sugar, stirring until fat is melted and sugar is dissolved.

  3. Cool to lukewarm.

  4. Put yeast in large bowl and add milk mixture.

  5. Beat eggs slightly and add to liquid in large bowl.

  6. Add lemon zest and vanilla.

  7. Add 3 cups of flour. Dough should still be gloppy.

  8. Mix in raisins.

  9. Add remaining flour until dough can be handled.

  10. Knead until light and elastic.

  11. Allow to rise in a draft-free, warm place until doubled in bulk.

  12. Punch down, shape into loaves and place in greased pans. Allow to rise again until doubled.

  13. Bake in 375 degree oven for 1 hour.
