Delicious, guilt-free, spicy stir fry

Recipe Ingredients for Kung Pao-wer

1/2 cup hot pepper, anaheim, julienned
1 cup red pepper, sliced
1 1/2 cup onion, sliced
2 cups broccoli, florets
1 1/4 cup portobella mushroom, chopped
1 1/2 cup yellow squash, sliced
1 cup green onions, 2" pieces
1 tablespoons peanut oil
8 oz chicken breast, sliced thin
4 tablespoons soy sauce
3 tablespoons rice wine vinegar
4 teaspoons Splenda
1 tablespoon cornstarch
2 teaspoons minced garlic
2 teaspoons red chili sauce

Recipe Directions for Kung Pao-wer

  1. Prep veggies, placing hot pepper, red pepper, onion, green onions, and broccoli in one bowl; squash and mushoom in a second bowl.

  2. Mix soy sauce through chili sauce together and set aside.

  3. Heat oil in non-stick wok on high and add chicken strips. Cook through. Remove to plate.

  4. Add peppers, onions and broccoli to hot wok. Cook until approximately half-way to desired tenderness. Add squash and mushroom and continue stirring until nearing desired tenderness.

  5. Add meat back to mix and pour in sauce. Continue stirring and tossing until sauce has thickened and veggies are crisp-tender.

  6. Remove from heat.

  7. Serve over brown rice for a healthy finish.
