Lowfat filling kung pao tofu --- use chewy - dried tofu for this dish. You can find these packaged in the vegan section of your grocers or in the vegetable aisle refrigerator.

Recipe Ingredients for Kung Pao with Tofu

3 tablespoon soy sauce
2 tablespoons sesame oil
3 tablespoon rice wine or sherry
2 tablespoons peanut or corn oil
6 tablespoons of chili pepper
1 tablespoon minced garlic
1/2 tablespoon ginger
1 cup of celery
1 cup of carrots
2 tablespoons of balsamic vinegar
1 teaspoon sugar
2 tablespoon of cornstarch, dissolved in 2 tablespoons water
1/2 cup roasted peanuts
16 ounces of tofu
1 cup of onions

Recipe Directions for Kung Pao with Tofu

  1. CUT CHICKEN/STEAK/TOFU into 1-inch cubes. Combine the soy sauce, sesame oil, rice wine/sherry, corn starch and salt in a glass bowl. Add the PROTEIN and stir to coat. Marinate for 1 hour, covered in the refrigerator.

  2. Place peanut/corn oil in a wok, swirling to coat the sides, and place over high heat. Add the chilies and cook until they begin to darken. Add the garlic, ginger and Szechwan pepper; continue to cook to infuse the oil. Add the scallions or onions of choice and celery and carrots. Remove chosen protein from the marinade and add it to the wok. Stir-fry the PROTEIN for 8 minutes until brown. Blend in soy sauce, rice wine, Chinese vinegar, sugar and chicken broth. Dissolve the cornstarch slurry and add it to the sauce, stirring, to thicken. Sprinkle in the peanuts and stir to coat. Serve over rice.
