Recipe Ingredients for Kung Pao Tofu

1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 small onion, chopped
1 tsp. garlic, minced
1 tsp. ginger, minced
1 tsp. red pepper flakes
14 oz. Extra firm tofu, chopped into 1" squares
2 tbsp. vegetable oil
1/2 cup roasted peanuts
1/4 cup chicken broth
2 tbsp. rice wine vinegar
2 1/2 tbsp. soy sauce
2 tsp. sugar
1 1/2 tsp. sesame oil
1 1/2 tsp. cornstarch

Recipe Directions for Kung Pao Tofu

Chop vegetables and combine sauce ingredients separately. Heat oil in wok over med. high heat. Stir fry tofu until golden, add onions and bell peppers and fry until softened. Add garlic, ginger, and pepper flakes. Cook until fragrant, about 10 seconds. Add sauce, cook until sauce boils and thickens. Add peanuts and toss to mix.
