Kung Pao Shrimp Recipe

I've made this many times and it is so good. Sub any protein for the shrimp - my 2nd favorite is bay scallops, yummy. Add swap or add any veggies. Not an everyday meal but it's better than takeout. As written it's 1,000 calories per serving. Could easily feed more than 4 people.

Recipe Ingredients for Kung Pao Shrimp

1 lbs. shrimp, cleaned, peeled, and tail off
1 tbsp cornstarch
4 tbsp extra virgin olive oil
4 green onions, greens and whites chopped
2 red bell peppers, chopped into stir fry size pieces
6 baby carrots, chopped
8 oz button or cremini mushrooms, sliced
4 cloves garlic, minced
1 tsp red pepper flakes, start with less and add to taste
1 1/2 tsp ground ginger or about 1" fresh grated ginger
1/2 cup rice wine vinegar
1/2 cup low sodium soy sauce
1 tbsp sugar
1/3 cup dry roasted peanuts
4 cups brown rice

Recipe Directions for Kung Pao Shrimp

  1. Toss shrimp in cornstarch

  2. Heat half the oil in a large non-stick skillet

  3. Add shrimp and cook until they are just done (or even slightly under done)

  4. Add remaining oil to the pan

  5. Add veggies, garlic, red pepper flakes, and ginger and sautee as desired. I add my carrots first and cook until the start to get soft. Then I add the other veggies for 3-5 minutes

  6. While veggies cook combine vinegar, soy sauce, and sugar in a bowl. Add to pan

  7. Return the shrimp to the pan and stir. I let this cook for about 10 minutes until the flavors meld and the sauce thickens a bit. The longer you let it simmer the spicier it will be.

  8. Stir in nuts and cook another 2 minutes or until desired taste / texture

  9. Serve over hot brown rice
