Kung Pao Chicken Recipe

This is a very quick, delicious dinner. I use more vegetables than most Chinese restaurants, and a chopped serrano pepper instead of whole cayenne peppers. The key to this recipe is to get the pan really hot so that everything cooks really quickly.

Recipe Ingredients for Kung Pao Chicken

16 oz Chicken
1 tbsp Olive Oil
2 oz Peanuts, All Types, Dry-roasted
1 pepper Pepper, Serrano
1 large Onions
1 cup, chopped Onions, Spring Or Scallions
1 medium Squash, Summer, Zucchini, Includes Skin
1 cup, chopped Peas, Edible-podded (sugar snap peas)
6 oz Mushrooms
1 tsp Sugars, Granulated
5 slices (1" dia) Ginger Root
5 cloves Garlic

Recipe Directions for Kung Pao Chicken

  1. Chop vegetables; they all can go in the same container except the green onions, which should be separate.

  2. Cut chicken into 1 inch pieces.

  3. Mix soy sauce, vinegar, and sugar in a small bowl and set aside.

  4. Heat oil on very high heat until almost at smoke point; sauté serrano pepper for 15 seconds.

  5. Add chicken and cook until brown; remove from pan.

  6. Sauté onions, zucchini, peas, mushrooms, garlic, ginger, and peanuts for about 30 seconds.

  7. Add soy-vinegar mixture and chicken; cook until reduced.

  8. Remove from heat, add green onions, and serve.
