Whole wheat oatmeal cookies with optional dark chocolate on top

1 cup Whole Wheat Flour
1.5 cup dry Old Fashioned Quaker Oats
0.5 teaspoon Baking Soda
0.5 teaspoon Baking Powder
0.5 tsp Salt, Table
2 tsp Cinnamon, Ground
1 large Egg, White
1 tsp Vanilla Extract
40 chips Premium Baking Chips
1 tbsp Molasses, Blackstrap
1.5 tsp Pumpkin Pie Spice
0.25 cup Sugars, Granulated
0.25 cup Vegetable Oil, Canola
0.25 cup Applesauce

Recipe Directions for KT's Whole Wheat Oatmeal Cookies with Semi Sweet Chocolate on Top

  1. Preheat the oven to 350 degrees Fahrenheit

  2. In a large bowl, combine all the dry ingredients

  3. In another bowl, mix the wet ingredients.

  4. Mix the two bowls together, and add walnuts or raisins if you wish

  5. If the mix seems too wet, add more flour/oats. If it's too dry, you might want to add an egg white.

  6. Cool the dough in the fridge for about 20 minutes

  7. Roll into tablespoon-sized balls, you may flatten them with a fork like a peanut butter cookie, if you wish. I keep them round little balls and just flatten the tops a tiny bit. Experiment a bit to see what size cookie works best for you.

  8. Bake cookies for 15-20 minutes. Keep an eye on them by the end, especially when adjusting using oil/applesauce or butter, or honey instead of sugar (tip, bake at 335 if using honey so it doesn't burn)

  9. Using a double boiler, carefully melt the semi-sweet chocolate. When cookies are cooled, spread a little bit of melted chocolate on the tops. It's best then to refrigerate the cookies to set the chocolate.

  10. I keep the cookies in the fridge, and take them out just a little bit before eating. This helps keep the chocolate nice.

  11. Yum! Great any time of the day. Depending on how healthy you decide to make them, (like leaving off the chocolate) they also make wonderful breakfast cookies.
