Great to warm your belly and fill your heart. The curry should be served with basmati or jasmin rice (brown basmati as a heart healthy option).

Recipe Ingredients for Krystal's Thai Chicken Curry

2 chicken breast
1 red bell pepper
1/2 red onion
2 chili peppers
2 tbsp garlic
2 tbsp ginger
1 tbsp salt
2 tbsp curry powder
16 oz Coconut Milk or reduced fat coconut milk
2 tbsp olive oil
1/2 tsp black pepper
2 c green beans
2 tbsp fish sauce

Recipe Directions for Krystal's Thai Chicken Curry

  1. chop chicken into bite sized pieces

  2. Marinade chicken for 30 min or longer with garlic, ginger, curry, salt, chili peppers and black pepper

  3. saute meat in olive oil

  4. add veggies once the meat has been mostly cooked, we want them to stay crunchy

  5. add fish sauce and coconut milk once meat is completely cooked through, let simmer for 15 minutes for the flavors to distribute (skim top of sauce if necessary, it may be needed if using the reduced fat coconut milk which can curdle)

  6. serve in a bowl with rice
