Makes 6 servings



Whole wheat and all-purpose flour. Also added flax seed meal and oats.

Recipe Ingredients for Kristy's Pancakes

1 cup unbleached all-purpose flour
1/2 cup whole wheat flour
1 tbsp granulated sugar
1 tbsp flax seed meal
1 tbsp quick cooking oats
1/2 tsp salt
1 tbsp baking powder
1 large egg
1 1/2 cups milk
3 tbsp melted butter

Recipe Directions for Kristy's Pancakes

  1. Preheat griddle to medium heat.

  2. In medium to large mixing bowl, combine dry ingredients with whisk. Make a well in the center to add wet ingredients.

  3. Add egg to center of well and beat. Do not try to incorporate to many dry ingredients.

  4. Add 1/2 of milk to center of well, incorporating some of the flour.

  5. Add the butter and remaining milk to center of well and mix in all dry ingredients.

  6. Mix until most of the lumps are gone. Batter will be a little thicker. If you like it thinner, add more milk.

  7. Use 1/4 cup measure to scoop batter onto griddle. Cook both sides until done. 1 serving = 2 pancakes
