A flavorful purred vegetable soup.

Recipe Ingredients for Krista's Curried Vegetable Soup

1 stick butter
2 onions, chopped
4 celery stalks
4 carrots
2 tablespoons Curry Powder
2 quarts chicken broth
4 cups potatoes, cubed
4 cups fresh broccoli, chopped
3 teaspoons salt
1 teaspoon pepper
2 cups half and half

Recipe Directions for Krista's Curried Vegetable Soup

finely chop onion, carrot and celery so they are aprox. the same size. Then saute them and the curry posder in the butter until soft and tender but not brown. Chop the broccoli and potatoes and add to the pot with the stock, salt and pepper. Cook until the vegetables are soft. Runt eh soup through a food mill or blend with an immersion blender till smooth. Add the half and half or cream. Serve.
