Seite 69 in D'Schwäbische Kuch. Used Frank's Quality Kraut from Coborn's and Food Club low-sodium bacon. Do not add any salt since sauerkraut and bacon contain high levels of sodium already!

Recipe Ingredients for Krautkrapfen mit Speck (recipe serves 4)

125 g unbleached white flour
125 g whole wheat flour
1 egg
6 tbsp water
794 g sauerkraut
2 large onions
8 oz Lower Sodium Bacon
2 tbsp unsalted butter

Recipe Directions for Krautkrapfen mit Speck (recipe serves 4)

  1. Prepare with flour, salt, eggs, and water a nudle dough

  2. Cut bacon, chop onion and fry until onions are transparent

  3. and Mix with the sauerkraut and heat mixture

  4. Cool off mixture before using

  5. Roll out dough into very thin flaps

  6. Put sauerkraut mix ontop

  7. Roll up and cut into 5 cm long pieces

  8. Heat up butter and add the pieces lying on their side

  9. Cover the pot and at medium heat cook for 30 min
