Breads, by Paul Hollywood This bread is very common in Cyprus and is often served with cheese and olives. The original recipe calls for 1 tbsp black cumin seeds, but I did not have them, so I substituted black poppy seeds.

Recipe Ingredients for Koulouri-Cypriot Village Bread

4 cups white bread flour
1 pinch of anise seed
1 tsp sea salt
1 oz. yeast (30 g)
1/4 cup olive oil
1 1/4 cup water
3 1/2 oz. sesame seeds
1 tbsp poppy seeds
1 tbsp caraway seeds

Recipe Directions for Koulouri-Cypriot Village Bread

  1. Grind anise with a mortar and pestle.

  2. Put the flour, salt, , olive oil, salt, and all but 1/4 cup of the water together in a bowl.

  3. Dissolve yeast in 1/4 cup of warm water.

  4. Add yeast mixture to the other ingredients.

  5. Beat with strong mixer until the dough clings together. Add the anise powder. Turn onto a lightly floured board, form into a ball and knead for 5 minutes. Let the dough stand in the bowl for one hour.

  6. Tip the seeds into a large bowl. Pour a little warm water into the seeds just to dampen them. This will allow the sesame seeds to balloon and release their juice.

  7. Line a baking sheet with parchment paper. Turn the dough out onto a lightly floured counter and shape it into a ball. Turn the ball into the seeds and roll until the entire ball is covered with seeds. Place the dough on the baking sheet and let it rise for one hour.

  8. Preheat the oven to 425 F. Using a knife make a cut around the middle of the ball and two on top. Bake in the oven for 30 minutes or until golden brown. Then transfer to a wife rack to cool.
