Recipe Ingredients for Kosher Vegan Chocolate Cupcakes

1/2 cup pumpkin, canned
1/2 cup maple syrup
2 cups unsweetened applesauce
1 teaspoon vanilla extract
1/2 cup cocoa powder
1 1/4 cups oat flour
1/2 cup tapioca starch
1/2 teaspoon xanthan gum
1 1/2 teaspoons baking powder
1 teaspoon baking soda

Recipe Directions for Kosher Vegan Chocolate Cupcakes

  1. Preheat the oven to 350 degrees F. Line 18 standard muffin tins with muffin/cupcake paper or generously grease the tins with cooking spray.

  2. Cream the butter and cocoa powder together. Add in the applesauce, vanilla and agave nectar. Blend until smooth. In a small bowl, combine the remaining ingredients. Add the flour blend to the applesauce mixture and mix gently to combine. Do not overmix.

  3. Spoon the mixture into the prepared tins. Fill each one half to three-quarters full. Bake for 22-25 minutes or until a toothpick inserted in the center comes out clean. Move the pans to a cooling rack. Cool for about 10 minutes before turning the cupcakes out onto the cooling rack to finish cooling. Allow them to fully cool before eating. Store in an airtight container and refrigerate or freeze for long-term storage.
