Based on a Japanese Croquette recipe but changed to be vegetarian and healthier. This can be made without the flour and the eggs but it'll be easier to pan fry with those included. The korokke size and filling could also be changed according to preference.

Recipe Ingredients for Korokke (Japanese Croquette)

4 medium potatoes, peeled
1 teaspoon sesame oil
1 small onion, minced
1 cup mixed vegetables
1 pinch table salt
1 teaspoon pepper
1 cups flour
2 eggs, beaten
1 cups breadcrumbs, japanese (panko)

Recipe Directions for Korokke (Japanese Croquette)

  1. Put potatoes in a pot and pour enough water to cover them all. Bring to a boil and let simmer until soft enough to mash.

  2. While the potatoes are boiling, add in oil, onions and mixed veggies to a heated pan and saute until onions are clear and the veggies are heated through. Set aside.

  3. Once the potatoes are soft enough, drain and transfer to bowl and mash well with either a potato masher or fork. Be careful of the heat.

  4. Add the sauteed veggies and onion along with salt and pepper and mix well with either a large spoon or with your hands.

  5. Take a heaping spoonful of the mixture and form into small ovals with your palms.

  6. Cover each oval with flour then dip it in the eggs and then coat with breadcrumbs.

  7. You can then keep this in the refrigerator/freezer until it is time to cook.

  8. You can either deep fry these korokke in oil heated to 350 F (177 C) or pan fry in a skillet with oil heated until smoke arises. Fry until golden brown.
