Recipe Ingredients for Korean Style Vegetables

1/4 teaspoon dark sesame oil
1/4 teaspoon vegetable oil
1/8 teaspoon crushed red pepper
1 garlic clove, minced
4 mushrooms, sliced
5 baby carrots
1 small zucchini, sliced
1 small yellow squash, sliced

Remaining ingredients:
1 tbsp low-sodium soy sauce
1/4 tablespoon brown sugar
1/4 tablespoon rice vinegar
1/4 tablespoon dark sesame oil
1/4 tablespoon sesame seeds, toasted

Recipe Directions for Korean Style Vegetables

  1. To prepare noodles, pour boiling water over noodles; let stand 10 minutes or until tender. Drain and rinse with cold water. Drain. Snip noodles several times with kitchen shears.

  2. To prepare vegetables, wipe skillet or wok clean with paper towels. Heat sesame oil and vegetable oil in pan over medium heat. Add red pepper and garlic clove; stir-fry 30 seconds. Add mushrooms, carrot, zucchini and squash; stir-fry 5 minutes.

  3. Reduce heat to medium-low. Add noodles to pan, stirring well to combine. Combine soy sauce, brown sugar, vinegar, and sesame oil, stirring with a whisk. Drizzle over noodle mixture; stir well to combine. Cook over medium-low heat 3 minutes or until thoroughly heated. Sprinkle with sesame seeds.
