Korean-Style Noodle Bowl Recipe

From Rachel Ray Magazine. Omitted the noodles as the nutrition level varies so much between brands - spaghetti, angel hair or soba noodles are best. Original recipe is for chicken or pork, but I tried shrimp and used a dash of fish sauce.

Recipe Ingredients for Korean-style Noodle Bowl

24 shrimp, medium, raw
3 cups cabbage, shredded
1/2 red bell pepper, sliced
1/2 green bell pepper, sliced
1 cup scallions, sliced on the diagonal
2 tablespoons olive oil
2 cloves garlic
1 tablespoon ginger
3 tablespoons honey
2 tablespoons rice vinegar
2 tablespoons reduced sodium soy sauce
2 tablespoons tomato paste
1 tablespoon hot water
1 dash hot sauce

Recipe Directions for Korean-style Noodle Bowl

  1. Boil water for noodles. Cook to al dente. Drain and keep warm.

  2. Meanwhile, in a blender or food processor combine garlic, ginger, honey, vinegar, soy sauce, tomato paste, splash of hot water from noodle boil and hot sauce. Blend until smooth. Set aside.

  3. Heat oil in a large skillet or wok on high. Add shrimp (and dash fish sauce if using) and saute 1-2 minutes. Add cabbage and peppers. Saute 3-4 minutes or until cabbage begins to wilt. Add scallions and blended sauce. Heat through, allowing sauce to thicken. Add drained pasta and toss to coat.
