Spicy chicken and peanuts. Main dish

Recipe Ingredients for KONG PAO CHICKEN

1/2 lb chicken, boneless breast
1 egg white
2 tbsp Soy sauce
1/2 c Sliced scallions
1/2 tbsp oil, peanut
1/2 tsp red pepper
1 tsp Sugar
2 tbsp wine, sherry, dry
1/2 c peanuts,salted

Recipe Directions for KONG PAO CHICKEN

  1. In small bowl, combine chicken, egg white, 1 T cornstarch and 1T soy sauce; mix well. Refrigerate one hour.

  2. In skillet, heat oil to 375 degrees F. Stir chicken mixture and spoon into hot oil. Stir fry until chicken turns white, about one minute.

  3. Add red pepper and cook one minute longer.

  4. Blend remaining cornstarch and soy sauce, sugar and sherry; add to chicken mixture, while stirring over high heat until mixture is coated with a light glaze. Stir in salted peanuts and scallions.

  5. Serve immediately (good with unseasoned rice)
