Transylvanian beef and rice casserole with Sauerkraut.

Recipe Ingredients for Kolozsvari Kapuszta

2 1/2 cups cooked rice
1 medium onion, diced
2 cloves garlic, minced
28 oz diced tomatoes
2 cups sauerkraut, drained
1/2 cup sour cream
1 tbsp butter
1 pound lean ground beef
1/2 tsp pepper
1 tbsp paprika
1 tsp beef bouillon

Recipe Directions for Kolozsvari Kapuszta

  1. Preheat oven to 350 F. Grease a 2.5 or 3 quart casserole dish with 1 tsp butter.

  2. Saute onions and garlic in remaining butter. Add beef; break it up and saute until cooked through. Drain off excess fat, if possible. Add pepper, paprika and bouillon. (I use "Better than Bouillon" beef paste.)

  3. Drain the tomatoes; discard all but 1/2 cup of the juice. Add remaining tomato juice to meat mixture.

  4. Drain sauerkraut, squeezing out most of the juice. Discard juice.

  5. Layer ingredients in casserole dish as follows: sauerkraut, rice, beef, tomatoes; repeat. Spread 1/2 cup sour cream over top.

  6. Cover and bake one hour or until hot and bubbly.
