Preparation tips: Kohlrabi is one of my favorite raw vegetables, and I've been known to buy it in farmers' markets around the world! This recipe was one of about two dozen salads I enjoyed this summer at a popular Jerusalem restaurant. If possible, prepare the salad early in the day or the day before serving to allow the flavors to blend.

Recipe Ingredients for Kohlrabi Salad

1 pound kohlrabi, peeled and sliced into 1/4-inch strips (or wider if you prefer)
4 tablespoons lemon juice
1/4 cup finely chopped parsley
1 freshly ground pepper to taste

Recipe Directions for Kohlrabi Salad

Combine all the ingredients except the garnish in a medium bowl. Refrigerate until serving; garnish if desired.
