Kofta Recipe

Middle Eastern flavour. Make on skewers.

Recipe Ingredients for Kofta

1/4 cup breadcrumbs
500 g beef, mince, lean
1/2 teaspoon salt
1/2 teaspoon pepper
1 tsp cumin seed, crushed
1 tsp coriander seeds, crushed
2 cloves garlic
3 tbsp parsley
1 egg
1 tbsp extra virgin olive oil
1 red pepper, hot, chopped finely, deseeded

Recipe Directions for Kofta

  1. Crush pepper, salt, cumin seeds, coriander seeds, in mortar and pestle or with the end of a rolling pin till fairly broken up.

  2. Beat egg.

  3. Chop parsley roughly.

  4. Chop garlic finely or use grater.

  5. Mix all ingredients in a bowl till thoroughly combined.

  6. Soak bamboo skewers so they don't burn on the BBQ or grill.

  7. With WET hands (wet regularily to prevent meat sticking to hands) press a handful of meat around a skewer to a kind of sausage shape.

  8. Chill for 1/2 hr at least.

  9. BBQ or grill till done.

  10. Serve with Coriander/mint yoghurt dip.(See recipe)
