Must eat 2 within 10 minutes of taking out of oven. With all the wheat germ and whole wheat flour - this turned out a bit dry. Try adding at least another 1/2 cup apple sauce next time.

Recipe Ingredients for Knock Out Banana-Pecan-Chocolate Chip Muffins

3/4 cup flour
1/2 cup wheat germ
3/4 cup whole wheat flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp salt
1/2 cup chocolate chips
4 bananas, mashed
1/2 cup unsweetened apple sauce 87334
1/2 cup packed brown sugar
25 g (1/9 cup) margarine, melted 120800
2/3 cup ground flaxseed
1 egg
1/2 oz vanilla 80616
1/2 cup pecans, chopped

Recipe Directions for Knock Out Banana-Pecan-Chocolate Chip Muffins

  1. Melt butter in bowl.

  2. Stir in wet ingredients (including sugar).

  3. Mash in banana.

  4. Mix dry ingredients in larger bowl.

  5. Mix wet into dry until just combined.

  6. Spray 16 muffin cups.

  7. Bake 20 minutes at 400F.
