Makes 20 servings



Filling soup, using 1/2 recipe of normal chopped veg as regular stone soup, and corn added. If you take regular recipe of stone soup, and use half for lasagnanot, use the other half for this, and add the corn and more chicken:)

Recipe Ingredients for kj's stone soup with corn, 1/2 veg of real stone soup

1 carrot Carrots
1/2 large Onions
1 cup slices Squash, Summer, Zucchini, Includes Skin
1/2 stalk, medium (7-1/2" - 8" long) Broccoli
2 cup cup Lentils
1 1/2 breast, bone and skin removed Chicken, Breast, Meat Only
12 cup (8 fl oz) Soup, Chicken Broth Or Bouillon
2 serving Extra Virgin Olive Oil
2 cups frozen corn

Recipe Directions for kj's stone soup with corn, 1/2 veg of real stone soup

  1. 1. sautee chopped onion til clear (10 mins+)

  2. 2. Add chopped carrot, sautee 5 mins more

  3. 3. Poach chicken breast (or use previously cooked) Aprox 1 lb

  4. 4. chop chicken, salt and pepper and set aside (could be done earlier)

  5. 5. Add veg & lentils to soup.

  6. 6. Stir all.

  7. 7. Stir in Chicken

  8. 8. Stir in broth

  9. 9. Simmer covered 30 mins -hour or longer.

  10. 10. Add seasoning while cooking if desired, I like cap ful of Thyme and Basil, and a bit of cumin.
