Salmon Fillet with Caramelized Grapefruit

Recipe Ingredients for Kitty's Grapefruit Salmon

20 oz Farm-raised Atlantic Salmon
1 serving (Del Monte) Fruit Naturals Red Grapefruit in 100% juice
1 1tsp Olive Oil
1/4 tsp Cloves, Ground
1/4 tsp Sea Salt

Recipe Directions for Kitty's Grapefruit Salmon

  1. Heat skillet over medium heat on eye. Place 1 TBS of Olive Oil in hot skillet.

  2. Place whole fillet of salmon in skillet and cover with lid. Cook for 3 minutes.

  3. Remove lid and flip fillet over.

  4. Sprinkle the cloves over the fillet and pour 1/2 of the grapefruit and juice around fillet, being sure to crush larger pieces of grapefruit.

  5. Cover and cook for 3 minutes; Turn broiler on high to warm.

  6. Remove lid and stir reducing juice and grapefruit pieces.

  7. Baste fillet and place skillet under broiler for 2 minutes.

  8. Check after 2 minutes and baste again with juice.

  9. Leave in for 1 more minute to brown top and then remove from oven.

  10. Sprinkle with 1/4 tsp of sea salt and let fish rest for 2 minutes.

  11. Cut in to 4 equal-sized pieces and serve.
