With sunflower seeds for extra protein and fruit for fibre. Very moist and slightly chewy. I put in a dessert spoon extra syrup to balance the extra dry ingredients. I think I will try a bit more sugar and less syrup next time.

Recipe Ingredients for Kit's Healthier Flapjacks

100 g Soya spread
80 g dark brown sugar
8 tsp golden syrup
2 g salt
2 tsp vanilla essence
200 g porridge oats
300 g banana
40 g dried mixed fruit
55 ml orange juice
1 tbsp self raising flour
25 g sunflower seeds

Recipe Directions for Kit's Healthier Flapjacks

  1. Soak mixed fruit in orange juice.

  2. Melt fat.

  3. Add sugar.

  4. Add syrup.

  5. Mix together.

  6. Add salt, vanilla.

  7. Stir in porridge oats.

  8. Mash up a banana and stir in.

  9. Add in fruit with the juice.

  10. Stir in sunflower seeds.

  11. Stir in flour.

  12. Chop the other banana in chunks and lightly fold in.

  13. Place mixture in a lined baking tray.

  14. Bake for 15-20mins at 200 c.
