Makes 9 servings



With swede, onions and chickpeas. Smells divine! Makes 6 generous servings or 9 if you serve with 1/2 side dishes. Too make vegetarian, just use vegetable stock. I'm just using what is there.

Recipe Ingredients for Kit's Cheese and Potato Pie

500 ml water
450 g swede
1 stock cube
4 cloves of garlic
1 tsp bay leaf
1/2 tsp dried thyme
1 tsp dried rosemary
1/2 tsp salt
115 g dried potato mash
240 g canned chickpeas
250 g onions
4 tsp olive oil
115 g cheddar cheese mature

Recipe Directions for Kit's Cheese and Potato Pie

  1. Peel and dice swede.

  2. Boil water and place swede in saucepan. Add herbs and garlic and boil for 10mins until soft.

  3. Season to taste. Add stock cube and dried mash. Turn heat off.

  4. Open and drain chickpeas. Stir into mash mix.

  5. Place mixture into a baking dish, make sure there is space near the top/lip.

  6. Finely slice red onions and place into a bowl. Pour in the olive oil and stir until evenly coated. Season with pepper. Sprinkle onto mash mix in baking dish.

  7. Grate the cheddar cheese and sprinkle evenly on top of onions.

  8. Bake in the oven for 15-20mins at 200 c. (Bake 15mins then switch off and leave in oven for another 10)

  9. The cheese should be melted, the onions cook and the kitchen smell of delicious cheese and onion goodness.

  10. Best served with baked beans.
