Recipe Ingredients for Kitchen Sink Cake

2 cups flour
1 tablespoon cinnamon
1/2 teaspoon nutmeg
2 teaspoons baking soda
1/2 teaspoon salt
1 cup vegetable oil
1 cup sugar
1/2 cup Splenda brown sugar
4 eggs
1 1/2 cups grated carrots
1 cup canned pineapple, drained
2 bananas
1 cup raisins

Recipe Directions for Kitchen Sink Cake

  1. Preheat oven to 350F.

  2. Line 9 x 13 baking pan with parchment or grease and flour pan.

  3. Whisk together flour, cinnamon, nutmeg, baking soda and salt. Set aside

  4. In large bowl beat vegetable oil, white sugar, brown sugar, and eggs on medium speed until combined. Whisk in carrots, pineapple and bananas.

  5. Add dry ingredients to wet ingredients a third at a time until incorporated. Fold in raisins.

  6. Pour batter into prepared pan and spread evenly. Bake 40 to 45 minutes until tester in center of cake comes out clean. Cool to room temperature and frost with cream cheese frosting, if desired.
