Recipe Ingredients for Kitchen Sink Barley Soup

2 tbsp light olive oil
1 cup diced onion
4 cloves garlic
1 cup diced celery
1 cup diced carrots
10 cups low sodium chicken stock
14 oz diced tomatoes
12 oz chicken breast
1 1/2 cups quick barley
1/2 cup lima beans, frozen
1/2 cup corn, frozen
1/2 cup green peas, frozen
1 tsp dried basil
1 tsp black pepper
1/2 tsp salt

Recipe Directions for Kitchen Sink Barley Soup

  1. Heat the oil in a large stockpot

  2. Add onions and saute until soft, five minutes

  3. Add garlic and saute another two minutes

  4. Add celery, carrots, stock, tomatoes, spices and barley. Bring to a boil, then simmer 10 minutes.

  5. Add the frozen veggies and chicken and simmer another 10 minutes.
