Recipe Ingredients for Kitchari with cauliflower and peas

2 tbs organic butter
1 1/2 tsp organic butter
1/2 tsp minced ginger
1 tsp cumin seeds
2 cups cauliflower florets
1/2 cup brown basmati rice
1/3 cup mung beans
1/4 tsp turmeric
1/2 cup peas
1 tsp salt

Recipe Directions for Kitchari with cauliflower and peas

  1. heat 2 TBS butter (or ghee) in saucepan over med-high. When it's hot add ginger and cumin and fry for just a few seconds before adding cauliflower. Stir fry 4 mins., until slightly browned and partially cooked. Stir in rice and beans, fry 1 minute. Add 3 1/2 cups water and turmeric and bring to full boil over high heat.

  2. Reduce heat to low, partially cover, and cook - stirring occasionally, for 40 minutes.

  3. Add peas and salt, cook for 5 mins., or until rice and beans are soft. Stir in remaining butter/ghee just before serving.
