A quick lunch snack scooped into endive leaves - delightful and low in calories to boot!

Recipe Ingredients for Kippered Snack Delite

100 g herring fillet
1/8 c red onion
1/2 c tomato
1/2 c hearts of palm
2 sprigs cilantro
1/8 c lime juice
1/2 c endive

Recipe Directions for Kippered Snack Delite

  1. 1. Mix diced tomato, diced hearts of palm, onion and chopped cilantro.

  2. 2. Squeeze fresh lime over the above.

  3. 3. Kippered Seafood snack sold in can in canned fish section - flake into small bits and add to tomato mixture above.

  4. Scoop into endive leaves! (or serve over your favorite cracker, tortilla, or chips - but don't forget to add the extra calories whe changing the delivery!)
